Palmiers
Palmiers are a French pastry cookie. Super quick to make if you already have some puff pastry dough in your freezer. I'll attach the recipe I use here. These cookies were invented in the 20th century. Great paired with your morning tea or coffee. Palmier is a French word for palm tree which this pastry gets its name due to the resemblance of a palm leaf. I've read about a few variations but haven't yet tried any. Once mentioned adding 2 tsp of cinnamon in with the sugar which sounds the best to me..
These cookies are best eaten same day as they are made but can be stored in an airtight container for a week, they just gradually loose their crispiness.
Place the frozen pastry dough on the countertop for about 30 min. Prep the countertop by sprinkling flour over a large area. You are going to roll the dough into a 12x12 square. Cutting the corners to make them straight and even. Measure out your sugar. Save a few tbsp aside in a small bowl. Note for sugar: Try to find sanding sugar, if you can't regular sugar is okay. Sanding sugar is just bigger chunks which gives it the classic look.
Now sprinkle half that sugar in the measuring cup evenly over the dough and using a rolling pin roll over it gently. Flip and do the same with the other side using the remaining sugar in the measuring cup.
Roll the dough tightly on one side half way to the middle point of the square. Do the same with the other side. See picture below. Place tray in the refrigerator for 30 min.

Preheat the oven to 450°F while waiting. Once dough has chilled take it out and cut into 1/2" slices.
Using that sugar that was set aside sprinkle some on top of the cookies while it is on the lined parchment paper. Place in oven and bake for 12 minutes. Flip them and bake another 2 minutes. Let cool down on the tray for a few minutes then transfer to the cooling rack for continued cooling.
My partner kept stealing them as soon as they came out which was tough because I wanted to get pictures of them! He even brought some to our neighbors while I was still baking. haha he seemed pretty impressed with how they turned out. We had seen these cookies when we were in France which is why I wanted to try to make them.
Something to know about us while traveling, is that we are both very passionate about visiting bakeries. That is pretty much where we ate everyday while traveling Europe. Nothing can ever beat those pastries and fresh sandwiches in freshly made baguettes every day. Ah the memories are making me hungry while writing this..

Ingredients:
1 Puff pastry sheet (Link will be here for a homemade recipe)
3/4 cup Coarse Sugar (can use granulated or sanding sugar)
Instructions:
1. Take dough out from freezer and let sit on the counter for 30 min.
2. Flour the counter and roll dough out to a 12 x 12 square, cut the corners to make them even. Save a few tbsp of sugar off to the side. Sprinkle half the sugar over it evenly and roll over it with the rolling pin. Flip and do the same with the remaining sugar.
3. Roll dough tightly on one side half way to the middle point of the square. Then roll the other side tightly meeting to the center point. Place tray in the refrigerator for 30 min. Let the oven preheat to 450°F while dough is cooling.
4. Take the dough out and cut into 1/2" slices. Sprinkle some sugar on top of the cookies. Place in the oven and bake for 12 minutes. Flip them and bake for another 2 min. Let cool down on tray for a few minutes then transfer to cooling rack for continued cooling.
